Recipe: Parsley Parmesan Pork Cutlet & Baked Potato & Leek



Parsley Parmesan Pork Cutlets
4 x Parsley Parmesan Pork Cutlets (Available at Meat Heath)
Olive Oil

Potato & Leek Bake
Olive Oil
6 Medium Potatoes
1 leek
300ml Thickened Cream


  1. Preheat oven to 180°C.  Peel the potatoes and wash under cold water & slice finely in rounds. Wash & finely slice leek also 
  2. Lightly grease a baking dish with olive oil and layer leek and potato alternating between the two & starting with leek and ending with a top layer of potato.  Sprinkle Salt and pepper and a scattering of thyme on each Potato layer.  
  3. Pour the cream over the top of the potato covering evenly and place in the oven for 1 hr
  4. Lightly grease a second dish, place pork cutlets in and cook in the oven for 25-35 minutes depending on the thickness (check with the butcher!)  Time with the Potato & Leek bake.
